I'll include alternatives to cream cheese frosting, just in case you are not a fan.

RED VELVET CAKE INGREDIENTS

Flour: I used all purpose flour, all though this was my first red velvet cake, I can testify that cakes made with both cake flour and all purpose flour taste just as amazing. If cake flour is available then go ahead and use cake flour.

Cocoa Powder: Used unsweetened cocoa powder. This gives the cake a mild chocolate flavor.

Baking Powder & Baking Soda: The best cake recipe uses both baking powder and baking soda.

Sugar: I used granulated sugar.it dissolves easier compared to brown sugar.

Salt: Modifies flavour.

Eggs: Eggs create structure and stability within the batter.

Sour Milk: I used soured milk in place of buttermilk. An alternative to sour milk is milk.

Vinegar: Vinegar helps add extra acid to help maintain the red color.

Butter: I used stock. You can use any type of butter or margarine. If you don't have butter then you can use olive oil, avocado oil or any vegetable oil.

Red Food Color: I used moir's crimson pink food colouring. There are a lot of food colors on the market to choose from.

Vanilla Extract: Pure vanilla extract adds the delicious flavour of vanilla to the cake.

HOW TO MAKE RED VELVET CAKE

  1. Preheat oven to 175°C. Lightly grease two 8-inch cake pans with nonstick oil spray, cooking oil, or butter. 
  2. Sift together flour, salt, and baking powder using a sieve mesh.
  3. In a mixing bowl combine butter and sugar, mix until well incorporated. Add eggs one at a time, beating the mixture after each addition to combine well.
  4. In a separate bowl, mix cocoa powder, red food coloring, and vanilla extract until smooth.
  5. Add color mixture to the egg and sugar mixture and stir vinegar. Mix using a wooden spoon.
  6. Add the dry ingredients to the wet ingredients and add soured cream. Mix until well incorporated.
  7. Divide batter among the 2 prepared pans and bake for 25 minutes or until a toothpick inserted into the center of the cake comes out clean.
  8. Cool on a wire rank completely.

CREAM CHEESE FROSTING RECIPE

CREAM CHEESE FROSTING INGREDIENTS
Flour & Milk: I didn't use store bought cream cheese so I made my own cream cheese using flour and milk.

Butter: I used salted butter because I didn't want to start adding salt to my  frosting. Butter has to be sorted so that the cream cheese frosting can be as creamy as possible.

Icing Sugar: Sift so that you don't spend a lot of time whisking the mixture.

Vanilla extract: Vanilla extract enhanced the flavor of the frosting.

HOW TO MAKE CREAM CHEESE FROSTING 
  1. On low heat, boil 1 cup of milk in a sauce pan then add 5 tablespoons of flour. Whisk using a small cooking stick til everything is well incorporated.
  2. Remove from the stove once the mixture is creamy and let it cool.
  3. Mix icing sugar and butter. Whisk til fluffy. Add vanilla extract and continue to whisk. Add flour paste. Beat until well blended, fluffy and light.

How Can I Make Cream Cheese Frosting Thicker?
Add more powdered sugar, 1 tablespoon at a time.

Do You Have To Refrigerate Cream Cheese Frosting?.
Yes. Refrigerate cream cheese frosting if you are going to eat your dessert later.

How To Refrigerate and freeze cream cheese.
Refrigerate in a airtight covered container for up to one week.
Freeze cream cheese frosting for up to 2 months. 
Let it soften on the counter for 15 minutes before spreading.

Can you make this frosting thinner?
If you need a thinner frosting, you can add more heavy cream until your desired consistency.

Can this cream cheese frosting be used for piping?.
Yes!. This frosting spreads and pipes nice.

Can I reduce the amount of powdered sugar?.
You can reduce the powdered sugar but keep in mind that the less powered sugar, the softer your frosting will be.

Do I have to use buttermilk?
If you are not a fan of soured milk then you have to use buttermilk. You can make your own buttermilk by combining milk with vinegar or lemon. I have never used the homemade buttermilk formula so I don't know how the cake taste. I used sour milk and the cake was super b.

What type of food coloring should I use?
I used moir's, it dissolves easily in the batter.

Should I use baking powder or baking soda?
Baking soda works well for red velvet cake, but I combined both baking powder and baking soda.

Why is my cake dry?
You are measuring your dry ingredients incorrectly.

Can you make this recipe into cupcakes?.
Yes you can. Follow the same procedure as though you are making a cake.

INGREDIENTS

Red Velvet Cake Ingredients:
  • 2 ½ cups all purpose flour
  • 1 ½ cups icing sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 Teaspoons baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 Teaspoon salt
  • 2 Large eggs
  • 2 tablespoon vanilla extract
  • 1 Cup milk
  • 1 tablespoon white vinegar
  • 100g butter
  • 1 tablespoon moir's crimson pink food coloring
  • 2 teaspoons vanilla extract
Cream Cheese Frosting Ingredients:

  • 1 Cup milk
  • 5 tablespoons flour
  • 100g butter
  • 1 ½ Icing sugar
  • 1 tablespoon vanilla extract

METHOD

    Bake Red Velvet Cake

    Prepare Cream Cheese Frosting:
    1. On low heat, boil 1 cup of milk in a sauce pan then add 5 tablespoons of flour. Whisk using a small cooking stick til everything is well incorporated.
    2. Remove from the stove once the mixture is creamy and let it cool.
    3. Mix icing sugar and butter. Whisk til fluffy. Add vanilla extract and continue to whisk. Add flour paste. Beat until well blended, fluffy and light.
    Assemble Cake:
    1. Place one cake on a large flat plate.Top and spread the frosting evenly over the cake. Flip the second cake upside down onto the first cake. Top with the remaining frosting, spreading evenly. Use the remaining frosting to cover sides of the cake. Smooth out the too and sides using an offset spatula. Crumble up the offcut of the cake and sprinkle a long the sides and top of the cake. Keep the cake refrigerated until ready to serve.
