HOW TO MAKE POTATO WEDGES 

Step 1.

Wash and peel potatoes. Transfer them to a cutting board and cut them into wedges. 

Transfer the wedges in a bowl and add some ice fr water. Let the wedges stay in cold water for 15 minutes then drain the water and pat dry.

Step 2.

Sprinkle the wedges with some salt, tumeric, grated parmesan cheese, garlic and herb spice ensuring that all the wedges are well coated.


Step 3.

Place the wedges on a non-stick baking pan and spread the wedges evenly across the pan then drizzle with olive oil.


Step 4. 

Bake at 180 degrees Celsius for 40 minutes of until the potatoes are crispy and have started to brown.

NOTE:
Soaking the potatoes in cold water removes excess starch and moisture so that the potatoes are nicely crispy. It also stops the potatoes from browning too quickly as they bake.

Grilled sausages are perfect for any occasion. I couldn't think of any better serving for my potato wedges apart from this delicious grilled hungarian sausage, well I did think of having grilled chicken to go with the wedges and the salad but my Hungarian sausage was there looking at me and it doesn't take as much time compared to grilled chicken.

Grilled or smoked sausages are great for backyard barbecues, this sausage is one of my favorite because it's deliciously made and it tastes great whether it's grilled or fried. I have had fried hungarian sausage a million times, the truth is I have never been disappointed. 
Hungarian sausage is a great option if you are planning on having kebab sausage. It's full of flavor.

GRILLED HUNGARIAN SAUSAGE INGREDIENTS

Sausage: I used  Hungarian sausage but boerewors or any time of Sausage can work great.
• Topping: Tomato Ketchup for topping.

HOW TO GRILL HUNGARIAN SAUSAGE

1. Cut some slits on the sausages and place on a baking pan. Grill at 180 degrees Celsius for 10 minutes.

COLESLAW SALAD RECIPE

This is a healthy slaw salad recipe with cucumbers, onion and cherry tomatoes. No mayonnaise used but I used apple cider vinegar to give this salad more life. This salad recipe is made of few ingredients yet it's colorful and flavourful. 
Coleslaw salad is one of my favorite side dishes but a lot of times I try to add in other vegetables and fruits to spice things up. The slaw salad goes well with grilled meals, that's why we are having it with grilled sausage and baked potato wedges.. It's a perfect combo of grilled everything.
You can easily make this recipe by slicing your cabbage with a slicer, you can also shred the cabbage by hand.

1. Using a kitchen knife and a cutting board chop white and red baby canbage. 
2. Put on a plate. Slice a cucumber and half an onion. 
3. Add some diced cherry tomatoes, sprinkle with salt and pepper. Lastly add apple cider vinegar and mix.

How to make Samosa

This isn't the type of recipe that is quick like the majority of recipes on this blog.
This Samosa Recipe is delicious but it takes time to make.the dough and the filling is easy but folding is the hardest,do not worry it isn't that hard though.

I used the following ingredients for this Samosa Recipe
√ all purpose flour
√ Tablespoon of cooking oil
√ Irish Potato
√ Coriander powder
√ Samosa Spice
√ Black pepper
√ Curry Rajah
√ Green beans
√ Carrot
√ Mince Meat
√ Egg
√ Salt

In a mixing bowl add flour,salt and water,mix til smooth.Wrap the bowl with a plastic wrap then put in a fridge while preparing the fillings.

Peel the Irish potatoes,wash them cut into cubes.wash green beans and carrots then cut them.put cooking oil in a frying pan,let the oil get hot then put mince meat meat in the pan(don't make meat balls)
Fry mince meat til brown then add onion,green pepper,Curry Rajah and black pepper, coriander powder,green beans ,garlic and carrots.



How to fold samosa
Divide the dough in small balls then place on a floured working surface.
Place a mound of filling in one corner of the samosa leaving 1 cm boarder.



Fold the pastry corner diagonally to create a triangle then continue to fold retaining the triangle shape.

Ingredients
  • 2 cups all purpose flour
  • 3 Tablespoons of cooking oil
  • 2 Irish Potatoes
  • 1 teaspoon of coriander powder
  • 1 teaspoon samosa spice
  • 1 teaspoon of black pepper
  • 1 teaspoon of Curry Rajah
  • 1 handful of green beans
  • 1 large carrot
  • 500 gram of mince meat
  • 1 egg
  • Any spice of your choice
  • Salt
Instructions

1. In a mixing bowl add flour,salt and water then mix with a handheld mixer til smooth. 
2. Wrap the bowl with a plastic wrap then put in a fridge while preparing the fillings. 
3. Wash the Irish potatoes,peel them and cut into cubes. 
4. Wash your green beans and carrots then cut them. 
5. Heat a frying pan on the stove,add cooking oil.when the cooking oil is hot,throw mince meat on the pan.fry the mince meat til brown then add onion,green pepper, Curry Rajah,black pepper, coriander powder,green beans, garlic and carrots. 
6. When the mince meat is cooked,remove the pan from the stove.cook Potatoes til tender. 
7. Remove the dough from the fridge and divide it in small balls. On a floured working surface start rolling the dough and place a mound of filling in one corner of the Samosa,leave a 1 cm boarder.do not overfill your triangle or they could split when cooking. Fold the pastry corner diagonally to create a triangle then continue to fold retaining the triangle shape,you can also use a spring rolls wrapper. 
8. Continue with the remaining dough and filling samosa using beaten Eggs 
9. Add cooking oil in depth of 2 cm in a frying pan.deep in samosas, quickly cook samosas in batches until golden brown on both sides. 
10. Make sure the cooking oil is not very hot because the samosa could get burn on the outside.the temperature should be medium. 
11. When ready transfer to a paper towel lined plate. 
12. Serve with a cup of coffee,milk or tea.

Ingredients
  • 3 Cups Rice
  • 1 Tablespoon of cooking oil
  • 1 Tablespoon of salt
  • 1 Tablespoon of tumeric
  • Rice spice
  • 2 diced garlic cloves
  • Rosemary
  • Quarter cup of Balsamic vinegar
  • Beef steak
  • 1 Tablespoon of Red wine
  • Water
  • 1 Tablespoon of Fresh cream
  • Red cabbage
  • White cabbage
  • Blue cheese dressing
  • Cherry tomatoes
  • Onion
  • Grated carrot
  • Cucumber
Instructions

Rice 
1.Put a medium sized saucepan on heat,bring water to boil. 
2. Wash rice 
3. Add 2 tablespoon of cooking oil,1 Tablespoon of salt,1 Tablespoon of tumeric,1 Tablespoon of Rice spice and lastly add rice 
4. Wait til rice is tender,then water is absorbed then remove from the heat. 

Steak

1. Marinate the steak in a mixing bowl,add 1 Tablespoon of cooking oil,2 diced garlic cloves and rosemary, lastly add some balsamic vinegar. 
2. Marinate for 30 minutes then fry in a pan until cooked to desired level. 
3. Use the remainder of the Marinate to make sauce. 
4. Add some red wine and let it simmer then add some tomato paste and a tablespoon of fresh cream. 
5. Simmer for 2 minutes then serve.serve warm. 

Salads 
 1. Cut red cabbage according to your desired shape,like wise cut the common cabbage (white) then add in a mixing bowl. 
2. Add cherry tomatoes. 
3. Grate a carrot then add it into a mixing bowl.Add cucumber 
4. Add onion,mix everything up then add a sprinkle of blue cheese dressing.

This Homemade pizza recipe is easy to make because it only requires a few ingredients.This is my first home made pizza,the first ever I was making so I decided to share it with you guys.

I'm not a fan of pizza,I usually only take a bit and leave everything for people at home.So I thought if perhaps I make the pizza myself I'll be able to enjoy it since I know the ingredients in it,and since I get to choose what to put in the pizza.

Truth is if you have once made bread sandwich or bagels then you can easily make this pizza.If the pizza turns out to be a disaster then you can simply try again til you get it right.

I heard you can buy pizza dough in some places.i'm not a pizza fan so I'm not sure whether they sell it in my place or not.
But I made this pizza from scratch.The goodness of making pizza crust yourself is that you'll get to choose whether it will be crispy,thin,thick or soft.
This home made pizza has it all, it's crispy, chewy and soft.

How to make pizza

Flour - i used  Unbleached all purpose flour.If you have bread flour you can use it,bread flour actually makes the pizza chewier.

Yeast - I use clover brand instant yeast.This yeast gives me great results.I love this brand of yeast because it does what it says.You only need 2 and a half Tablespoons to get your job done.

Water - 1/2 cups of water is the perfect amount.I use warm water so that the dough rising time will be cut down.

Oil - Tablespoons of extra virgin oil adds flavor to the dough.

Sugar - Sugar increases the yeast activity and it makes the dough tender.

Salt - There is no pizza without salt.

Cheddar - I couldn't use cheddar on it's own so I had to include mozzarella.

Simple and quick to make,this home made pizza recipe is crispy, chewy and soft.

Ingredients
  • All purpose flour
  • 2 and a half teaspoonYeast
  • 1 tablespoon of Salt
  • 1 tablespoon of Sugar
  • 4 tablespoon extra virgin oil
  • 2 Cups warm Water
  • Ketchup
  • Cheddar
  • Tomato
  • Onion
  • Green pepper
  • French Polony
  • Salami
  • Mozzarella
  • Thyme
1.Add yeast in 2 tablespoon of warm water,let it sit for 10 minutes. Add 2 cups of warm water in a mixing bowl,followed by yeast and unbleached all purpose flour 

2. Add 4 tablespoons of extra virgin olive oil,add 1 tablespoon of salt,and 1 tablespoon of sugar. 

3. Mix all the ingredients by hands or using a hand held mixer.(kneading by hands always gives great results). 

4. When done mixing cover your mixing bowl tightly with a plastic wrap or a kitchen towel. 

5. Set aside to rise for 2 hours or you can leave it overnight in the refrigerator. 

6. Remove the dough from the refrigerator and allow to rest for 20-40 minutes. 

7. Switch on the oven for 2 minutes at 60°C then turn it off.Place the dough in the oven.Keep the oven door open while you wait for the dough to double in size then close the door. 

8. Remove your dough from the oven then start shaping it.switch on the oven while shaping the pizza.Preheat it at 240°C for 15 minutes while you continue to shape the dough. 

9. Grease your pizza pan with cooking oil.Divide the dough into two,with oil in your hands, gently flatten your pizza.Flatten your pizza into 12 pieces. 

10. Cover your pizza with a plastic wrap once again while you prepare your toppings.

12. Arrange your toppings starting with the ketchup, cheddar, tomato,Onion,green pepper, French Polony,salami,mozerella then lastly thyme 

13. Bake for 25 minutes at 180 degrees Celsius.

2. mix thoroughly to make it's evenly mixed. Roll the mince meat into meat balls.

1. Add water in a pot,add salt and a teaspoon of cooking oil then cook on high heat.

2. Put the spaghetti in a pot(don't break the spaghetti)use a fork to stair the spaghetti once it starts getting soft.

3. Boil until cooked but firm to bite. drain out all the extra water using a colander,when the water drains completely,put the spaghetti back in the pot and add half a teaspoon of butter so that the spaghetti don't stick to each other.

  • Spring onion
  • Diced basil
  • Spinach leaf
  • 1 egg
  • Garlic
  • Herb spice
  • Salt
  • Black pepper
  • Quarter Bread crumbs
  • Beef stock
  • Cream cheese
  • Teaspoon cooking oil
  • Teaspoon butter
Instructions
1. Put one packet of mince meat in a mixing bowl. Add one diced Onion, spring Onion, finely diced basil and spinach leaf. Then add one beaten egg, quarter cup of bread crumbs, a sprinkle of garlic and herb spice, salt and black pepper. 
2. Mix thoroughly to make sure it's evenly mixed ( it's best to use your hands). Roll the mince into meat balls. 
3. Fry them over low heat,make sure they are brown all around. 
4. Remove from the pan and add some tomato paste, cream cheese, crushed garlic and beef stock to create the meatball sauce. 5. Let it simmer for 5 minuted then add back the meatballs. 

 Spaghetti 
1. Bowl some cup of water,add salt and a teaspoon of cooking oil,heat the pot on high heat. 
2. Add spaghetti in the pot( do not break the spaghetti) when the spaghetti starts to soften stair with a fork so that it can evenly cook. 
3. Boil until cooked, but firm to the bite. Drain out all the extra water and add half a teaspoon of butter do it doesn't stick to each other. 
4. I served my Meatballs on a rolled bed of spaghetti with sprinkled sautéed spinach and tomato sauce. 
5. I grated Parmesan cheese over the meatballs.

4. Arrange lettuce on a serving plate.cut avocadoes into small pieces and arrange them on one row.cut cherry tomatoes and arrange them just after the avocado.

1. Cut and cook Potatoes for 20 minutes.drain using a colander,let the potatoes sit on a colander for 5 minutes til the water completely drains.

3. Add 2 tablespoons of salted butter or more tablespoons depending with how much potatoes you have or how much you love your food to be buttery.

4. Heat your milk/cream.this will help your butter to melt and also help the potatoes absorb and keep them hot.add your milk bit by bit in order to get the right consistency.

5. Sprinkle black pepper and you are done.

Here is the simple way of cooking Spaghetti.

1. Add water in a pot,add salt and put the pot on the stove.

2. When the water is hot,add spaghetti.cook according to the instructions on the package.

3. Drain and set aside.

4. Heat a pan and add butter and a bit of olive oil.

  • Carrots
  • Mushrooms
  • 2 cups of flour
  • 5 teaspoons of grated mozzarella
  • Black pepper
  • Garlic
  • Salt
  • Cheese
  • Eggs
  • Yeast
  • Carrots
  • Fresh cream
  • Cheddar cheese
  • Milk
1. Add 2 cups of flour in a bowl,add pinch of salt and a tablespoon of instant yeast. Whisk the ingredients. 
2. Add milk to the ingredients and stir til dough is formed. 
3. Place the dough on a smooth surface and knead with your hands. 
4. Put the dough in a bowl and cover the bowl with a plastic wrap. 
5. Put the bowl in a fridge and let the dough rise for 2 hours.remove dough from the fridge and separate the dough into balls. 
6. Roll the balls in readiness of the filling. Filling 
1. Cut the steak into pieces,cook for 3 minutes then deep fry til golden brown. 
2. Cut carrots and add to the meat,add mushrooms and 4 teaspoons of flour,4 teaspoons of fresh cream,5 teaspoons of grated mozzarella,garlic, salt and cheese. Add the pastry to the pie,roll the pastry then cover the pie. 
3. Brush the pie with eggs for a shinny look. 
4. Bake for 20 minutes at 180°
