Baked Chicken Pie Recipe


•800g puff pastry
•2 large chicken breasts, cubed
•A cup of peas(frozen or fresh)
•1 large onion, diced 
•2 carrots, diced
•1 large potato, cubed
•1 chicken stock cube
•1 tablespoon of flour
•1 tablespoon of butter
•200mls of milk 
•Salt and pepper
•1 egg


1. Start by sautéing your chicken in a touch of oil, add the onions, carrots and potato and lightly brown them. Add in the stock cube and a cup of water and simmer for 10mins. 
2. Throw in your herbs, pinch of salt and pepper, the flour, butter and milk to thicken up the filling. Simmer uncovered for 15mins. Add the peas right at the end so as not to overcook them. Leave to cool.
3. Preheat your oven to 190°c. Lightly grease your dish and roll out your pastry to fit the dish for the top and bottom. Place your chicken filling and cover with the remaining pastry. Egg wash (I usually just use the egg yolk for a more golden brown color) the top and bake for 30mins.
