This is an additional to the cake family on this blog,the first banana cake on this blog

But  this is my first banana cake.It was my first attempt and the first ever banana cake on this website.
So I hope you'll enjoy it and try baking the best banana cake recipe





PICKING BANANAS
Use overripe bananas,the bananas with dark patches are the sweetest,so pick those.

THE TYPE OF FLOUR TO USE
You can use cake flour or all-purpose flour.

Mix flour, baking powder, baking soda, cinnamon and salt then mix in a bowl using a handheld mixer then lastly add bananas
Mix the dry ingredients to the wet ingredients you had made earlier.
Whisky the ingredients til smooth
Put the mixture in the oven and bake at 180° for 20 minutes.

STORING THE CAKE

You can store the cake in the refrigerator overnight as long it's soft and moist, if the cake isn't soft it will be dry when you store it in the refrigerator.

Moist 
This banana cake is super moist with cream cheese frosting,banana
I made sure bananas were enough so the cake didn't lose it's banana flavor
How to make banana cake

I used 4 medium bananas,I didn't want the eggs in the cake to steal the flavor of the cake, thus I used 4 bananas
Make sure the bananas are washed,it doesn't matter whether they look clean or you bought them in a spark clean super market,so many people handle these food products before they are put in shelves.
Even if we peel some fruits,I always make sure I wash them.
I mashed the bananas in a mixer-if you don't have a mixer,you can just mix them in a bowl with the help of a spoon.

I used brown sugar and  vanilla essence.
Sugar and essence go together as long as it's not too much.
I also added cinnamon.i used half tablespoon of cinnamon as not to take away the banana flavor from the cake

I mixed cooking oil,eggs, sugar, vanilla essence,melted margarine and a pinch of salt.
This mixture produced bubbles which made the cake moist.

By the way last month I made a banana bread but I've being busy that I haven't written a blog post about the bread.

Ingredients
  • 2 Cups flour
  • 1 teaspoon baking soda
  • 1 Teaspoon baking powder
  • Half Tablespoon of cinnamon
  • 1 Cup of sugar
  • 1 Cup of oil
  • Pinch of salt
  • 1 Cup of Melted Margarine
  • 2 Cups of Milk
  • 1 Tablespoon of Vanilla essence
  • 4 big mashed bananas
  • 4 Eggs
Get a big bowl,mix flour,baking powder, baking soda, cinnamon and salt 
 Get a separate bowl,mix sugar,oul,melted margarine,eggs,milk and vanilla essence 
  Lastly mix bananas 
2  mix  wet ingredients to dry ingredients,Whisky til everything is smooth
Put the mixture in the oven and bake at 180 °C for 20 minutes
 Decorate your cake with icing ,If you don't have icing,Whip unsalted butter, icing sugar and cocoa powder to make icing

I love smoothies but I'm not a smoothie junk because I only drink them when it's hot because I do not want to get a cold. I love a perfect fruity smoothie.

Frozen blueberry And Pineapple

You can buy organic pre-chopped frozen fruits in a grocery store.
You can also freeze your fresh fruits by placing the fruit on a baking sheet lined with parchment paper. Spread the fruit in a layer making sure that no pieces are touching. Freeze completely then place in a plastic bags. 
Note: you have to freeze the fruits first before placing them in the plastic bags. If you place fresh fruits in a plastic bag and freeze you'll have frozen fruits that will be hard to separate and to use.
Your summer isn't complete without frozen smoothies.

Some of your fruits should be frozen for best results. But if you do not have any frozen fruit available then you can add a few ice cubes to have that smoothie taste.

Blueberry Pineapple Smoothie Ingredients
♦1 cup vanilla Greek yogurt
3 Cups Frozen Blueberries

1.Begin by adding blueberries in a blender. Blend then add in the cups.

Instructions

1 Wash your watermelon Cut into your desired shape 

 2 Arrange them on a plate but make sure to leave a space in the middle of the plate

 3 Wash your oranges,cut and arrange them on top of the watermelon Wash your grapes and put in the space you had left on your plate 

 4 On another separate tray Cut your watermelon into small pieces Put your watermelon on a tray 

 5 Once again leave space on the middle Decorate your washed grapes on top of the watermelon 

 6 Arrange your oranges in the middle part.

Baked Potato Wedges And Fried Fish


Potato baked wedges and fried fish is a delicious way to eat fish.
This recipe is delicious and very easy to make,nothing fancy other than a few ingredients.

FRIED FISH
I have noticed that a lot of fish recipes from outside Africa use skinless fish.Here in Zambia fishes with skins are the most popular types of fish,in fact I have never been to a restaurant had ever offered me skinless fish.
I have been to Nigeria, Tanzania and Ghana and these are the types of fish popular.
Use whatever type of fish you prefer,your fish will be as delicious as any type of fish.

HOW TO COOK FRIED FISH

Step 1

Remove the fish's scales using a fish scaler.I have seen comments on my other fish recipe,the commenters said that they buy already cleaned fish.I buy fish in a box from a fisheries company, I'm not sure if they actually sale already cleaned fish but I'll consult the next time I go there.


STEP 2
Make sure the fish is completely dry before you start frying as excess moisture can lower the temperature of cooking oil.

HOW TO COOK FISH PERFECTLY
Use a heavy pan.
Make sure you heat the pan before adding oil,do not move the fish til it naturally releases or the fish will be dry.

HOW TO KNOW THE OIL IS HOT ENOUGH.
Insert a wooden spoon into the oil,if the oil is hot it will bubble around the stick.

TIP.
Use a paper towel lined plate to drain the fish as it will absorb more oil compared to a wire rank.

Serve with potato baked wedges.

These baked potato wedges are seasoned with mixed herbs and butter then they are grilled til a bit crispy.

I fry potato wedges a lot so this time I decided to have them baked.these baked potato wedges complimented the fried fish.

HOW TO CUT POTATOES INTO WEDGES?

First wash your potatoes.peel the potatoes then cut them in half,and another half from every half to make them quarters,then slice those quarters into fours.

HOW TO MAKE POTATO WEDGES

After you have sliced all your potatoes, it's time to add them in a pot of water,add salt and garlic then cook on low heat.
When your potatoes are ready,drain the water.add butter and mixed herbs then grill til a bit crispy on top

TIP
You can use any seasoning to spice things up a bit

HOW TO COOK GREEN BEANS AND EGG PLANTS

STEP 1
Wash and cut green beans into your desired shape.
Wash and cut your eggplants into your desired shape.

STEP 2
On low heat fry Onion,when the onion is ready,add eggs,when the egg plants are almost ready,add green beans and garlic.switch off the stove and simmer for a few seconds.

Serve with fried fish

Potato baked wedges and fried fish is a delicious way to eat fish.

  • 5 Large Fish
  • Potatoes
  • Green beans
  • Egg plants

1.Using your fish scaler or a knife scale out the fish scales. Using a knife remove the fish's intestines and all the dirty from the stomach,remove it's otoliths and eyes. 

 2.Clean the fish and season it with salt and garlic,let it dry completely on a colander 

3.Heat a pan,put cooking oil in the pan,allow the cooking oil to be hot enough (insert a wooden spoon into the oil,if the oil is hot it will bubble around the stick) deep fry the fish on both sides til golden brown. Use a paper towl-lined plate to drain the fish as it will absorb more oil compared to a wire rank. 

4. Clean your potatoes,peel then cut them into half,cut halfs from every half to make quarters then slice the quarters into fours. 

5.After you have sliced all your potatoes, it's time to add them in a pot of water,add salt and garlic then cook on low heat. 

6.When the potatoes are ready,drain the water,add potatos in a baking pan,then add butter and mixed herbs then grill til a bit crispy on top. 

7. Wash and cut green beans into your desired shape,wash and cut your eggplants into your desired shape 

8.On low heat fry onions,when the onion is ready,add eggplants,when the eggplants are almost ready,add green beans and garlic.Switch off the stove and let it simmer for a few seconds. 

9.Serve your fried fish, eggplants,green beans and baked potato wedges.

This Rice Recipe only takes a few minutes.I don't soak my rice because I don't like it tastes like it's over cooked.Rice never tastes as good as it should when over cooked.

I have used easy to find vegetables, that's why this is a quick Vegetable rice recipe.
If you are going to use frozen vegetables in your rice make sure there isn't ice Crystal as that would make your rice to have excess water, unless you are going to measure the water you'll use in your rice carefully.

Vegetable Fried Rice Recipe

Simple but delicious is what defines this vegetable fried rice recipe
Ride - I used Nakonde rice because the rice doesn't easily get light unless it's over cooked.The rice smells nice and it tastes delicious.
My other favorite rice is d'elight rice.D'elight rice is..truth is there are no words to describe this rice,it has a beautiful smell,it also doesn't get light,when I say light I mean looking like porridge.some rice taste and look like porridge when cooked.
D'elight and Nakonde rice are the top options for the majority of people in Zambia.

Green Bean - I went for the green beans that were very greenish and fresh.Do you notice how green the green beans look even after been cooked? That's quality.

Carrots - Just like with the green beans I went for the fresh carrots to compliment this recipe.

1.  Add water in a pot,add salt, tumeric and cooking 

2.  When the water is warm,wash your rice and add in the pot.Cook your rice on medium heat for only 20 minutes. 

3. While the rice is cooking wash your green bean and your carrots.

4. Cut your carrots and your green beans separately. 

5.  Heat cooking oil on medium heat and fry your rice,continue to stir your rice using a spatula so that the rice won't stick to the pan.Fry your rice for another 10-15 minutes.

6.  Fry your carrots and green beans in the same pan.

7. Remove your rice and your Vegetables from the stove,mix and let it simmer for a few minutes Before serving.

I'm not from the USA,never even been there so I have not had the pleasure of having an authentic Chicago style pizza.
One of my friend,a food blogger shared a Chicago-style Deep Dish Pizza blog post,I got amused and thought of trying.
Not sure if this is exactly how a Chicago-style deep dish pizza looks,but one thing I can tell you is that the pizza tasted amazing.i have mentioned that I don't really like pizza, therefore I only make it for the sake of my family,but you know I really enjoyed this pizza.
Crusty,crusty is the perfect definition.

Internet has made things easier for food lovers,well and everyone else on this planet.you do not need to travel all the way to Chicago in order to have this incredibly delicious Chicago style pizza,you just need to make it at home,and it's easier to make one.

Chicago-style pizza is a different type of pizza.it looks Large,nothing like the regular pizza you are used to.this pizza is baked in a deep dish pan.
I have read online that the correct way to eat Chicago-style pizza is with a fork.This is perhaps the case because the cheese goes on top,plus other sauce,so eating with a fork is one way of avoiding making a mess.

This buttery,crusty with a flaky texture is the most delicious pizza I have ever baked.and it has motivated me to bake pizza regularly,perhaps I might develop some deep love for pizza.
Chicago style deep dish pizza involves a lot of steps when preparing,these steps are still easy to follow and to do.When you spend a lot of time making a dish, perfection is what you'll make.

LAMINATING THE PIZZA DOUGH.

What in God's name is to laminate the pizza dough?
Calm down!it sounds weird but this is a very important step if you are making a deep dish Chicago-style pizza.
If you want your pizza to have flaky layers then you'll definitely want to laminate the dough,plus there is no authentic Chicago-style pizza that doesn't involve this process.
The process might sound hard but believe me it's super easy.laminating simply means spreading butter on your pizza dough and folding it up then rolling the pizza dough out again in order to lock the butter inside.
Easy right?I told you.
How can pizza be flaky,crusty,buttery,crunchy and tender at the same time?it's no magic.

You make the sauce while waiting for the pizza dough to rise,the sauce is left on the stove to reduce in size, thereby giving it time for the texture to thicken.

This buttery,crusty with a flaky texture is the most delicious pizza I have ever baked.and it has motivated me to bake pizza regularly,perhaps I might develop some deep love for pizza.
Chicago style deep dish pizza involves a lot of steps when preparing,these steps are still easy to follow and to do.When you spend a lot of time making a dish, perfection is what you'll make.

Ingredients
  • PIZZA DOUGH
  • 4 cups all-purpose flour
  • 1/2 cup yellow cornmeal/Semolina
  • 2 Tablespoon instant yeast
  • 2 teaspoons granulated white sugar
  • 1 teaspoon of salt
  • 1¼ cups water 
  • 3 tablespoons unsalted butter (melted and slightly cooled)
  • 4 tablespoons unsalted butter (it should be at room temperature)
  • 3 tablespoons and 1 teaspoon olive oil
  • PIZZA SAUCE
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 medium minced red onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoon Italian seasoning
  • 1 teaspoon crushed red pepper flakes
  • 3 minced cloves of garlic
  • One 28-ounce can crushed tomatoes(unsalted)
  • 1 teaspoon granulated white sugar
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon olive oil
  • TOPPINGS:
  • 1 pound Italian sausage (casings should be removed)
  • Half cup sliced olives
  • 16 ounces shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese



Instructions

TO MAKE THE PIZZA DOUGH
1. Add flour, cornmeal, yeast, sugar and salt in a large mixing bowl,Using a handheld mixer mix the ingredients on low speed until blended.if you don't have a hand held mixer or any mixer then you'll mix the ingredients by hands. Add water and melted butter. Mix until smooth. 

2. Coat the sides and bottom of a large mixing bowl with 1 teaspoon of olive oil. Transfer the pizza dough into another mixing bowl,the bowl should be clean and oiled.turn to coat. Cover with plastic wrap and let the dough rest at room temperature until nearly doubled in size for about 1 hour. 

TO MAKE THE PIZZA SAUCE
1. While the dough rises, prepare the pizza sauce. In a medium saucepan combine the 1 tablespoon of olive oil and 1 tablespoon butter.Then add Italian seasoning , crushed red pepper,pepper,salt and minced onion,Cook on medium heat for 4 minutes while frequently stirring the Sauce until the onion is softened. Add the garlic and cook for 30 seconds. Add tomatoes and sugar and bring to simmer. Reduce the heat to low and cook, stirring frequently, until the sauce has reduced to about 2 cups.cook for another 30 minutes. 

 2. Remove from the heat and add the fresh basil and olive oil. Check the seasoning and add salt if needed. Cover and set aside. 

 TO LAMINATE THE PIZZA DOUGH
1. Adjust the oven rack to the lowest position and preheat oven to 210 degrees. Turn the dough out onto a clean countertop. Roll the dough into a 15 by 12-inch rectangle working surface. Using a rolling pin as a guide, spread the softened butter over the dough leaving a half border along the edges.nicely roll the dough into a cyclinder. With the seam-side down, using your finger tips flatten the dough into a 18 by 4-inch rectangle. Cut the rectangle in half crosswise. 

2. Fold the dough into thirds while working with one half at a time. Pinch the seams together to form a ball. Repeat the process with the remaining dough and transfer the balls to the oiled bowl. Cover tightly with a plastic wrap and let the dough rise in the refrigerator until nearly double in size for 1 hour.

3. While the dough is rising, cook the Italian sausage in a large non-stick skillet pan. Break the sausage up into pieces and sauté until cooked. Drain and set aside.

TO ASSEMBLE AND BAKE THE PIZZAS
1. Coat two 9-inch cast iron skillets or cake pans with 2 tablespoons of olive oil each.
On a clean countertop, roll one of the dough balls into a 13-inch round shape the dough should be 1/4-inch thick. Roll the dough  and transfer it to the prepared skillet. Unroll the dough as soon as you transfer it to the Skillet.gently press into the pan, making sure you work it into the corners and 1-inch up the sides. If the dough resists,let it to rest for 3 minutes before trying again. Repeat the process with the remaining dough ball.

2. Divide the shredded mozzarella,Sprinkle each pizza with 2 cups of the shredded mozzarella. Divide the sauce between the two pizzas, spreading with the back of the spatula until evenly distributed over the cheese layer. Divide the cooked Italian sausage between the two pizzas, scattering all over to cover the sauce. Top with the olives, then lastly the Parmesan cheese.

3. Bake for 20 minutes until the crust is golden brown,in case of over-browning, tent the pizza with foil until cooked thoroughly.

4. Remove the pizza from the oven and let it cool for 15 minutes before serving.

I picked the most easy ingredients

√ 1 Pack of macaroni
√ 1 Small Cup of green beans
√ 4 massive Carrots
√ 2 Tomatoes
√ One Medium Onion
√ Salt

My son is no fan of greens however he enjoys green beans and carrots it's the purpose why I went for these 2 ingredients.

This recipe solely takes 10 minutes to prepare and 20 minutes to cook,it's not going to waste your time,in fact it's the ideal recipe if you desire something simple and convenient to cook.

I didn't use any spice,cheese or cream however you can add them if you want.
This recipe does not comprise any chill consequently making it ideal for kids.

I cooked macaroni,no meat,no chicken,just vegetables so I'm calling it vegan macaroni.

Ingredients
  • 1 Pack of macaroni
  • 1 Small Cup of green beans
  • 4 large carrots
  • 2 Tomatoes
  • 1 medium onion
  • Salt
1 Add 5 cups of water and teaspoon salt in a pot.bring to boil. Add 1 Pack of macaroni- cook on medium heat,stir with a fork til the macaroni is tender. 

 2 Drain all the water using a colander and set aside(I like opening tap water on the macaroni as soon as I remove from the stove in order to prevent the macaroni from sticking together) 

 3 Wash your carrots and cut.put to boil in a pan,add a pinch of salt Wash your green beans while your carrots are heating.cut your green beans and add to the same pan you are cooking your carrots. 

 4 When your carrots and green beans are tinder,remove from the heat,drain the water if at all there was left any.set aside 

 5 Add oil on a pan,put to heat on a medium heat,wash and cut your tomatoes and onion,add in cooking oil and stir fry til ready.

 6 Remove from heat.pour your cooked carrots and green beans in sauce,stir with a fork then add to the macaroni.

This is the method I used to make caramel topping.
I melted butter,added brown sugar and essence then I whisked for 5 minutes with a hand held mixer.
I used brown sugar to make caramel topping,but you can use white sugar.you can also use a bit of corn syrup if you so wish.

How to make pineapple upside down cake


Caramel Topping/Sauce Method

Melt butter then add sugar and essence.whisk for 5 minutes on low heat to make caramel topping.pour in your greased baking tin,then top up the pineapple rings.
Arrange them nicely and set aside.

Follow these simple instructions and you have the perfect pineapple upside down cake recipe.

Add flour,salt and baking powder in a mixing bowl, whisk together then set aside.
Mix butter and sugar until creamy,add eggs one at a time then add essence.
Add the mixed dry ingredients but by bit.add milk,sour Milk and pineapple juice til everything is mixed completely.
Pour over the Pineapples you has set aside and bake at 180°C for 40-45 minutes or until skewer comes out clean.
Leave to cool for 10 minutes then flip the cake upside down.

How to flip the cake 

Once your pineapple upside down cake is cool flip is out into a plate by running a spatula or a thin cake between the pan and the cake.put the plate over the cake and flip the cake into the serving plate.

Ingredients
  • 2 Cups all purpose flour
  • 2 Teaspoon Salt
  • Half Cup brown Sugar
  • 150g butter
  • 3 Eggs
  • 1 Teaspoon vanilla
  • Half Cup sour milk
  • Half Cup Milk
  • Half Cup Pineapple Juice
  • 1 teaspoon caramel essence
Instructions

1 Make a caramel topping: Mix butter and brown sugar then heat in a saucepan on medium heat until sugar disolves. 

 2 Pour your caramel into a greased pan.top up the pineapple rings,arrange them nicely on top of the caramel mixture. 

 3 Make Cake Batter: Mix flour, baking powder and salt in a mixing bowl and whisk for a minute 

 4 In a separate bowl add butter,sugar and start whisking using a handheld mixer.Add eggs one at a time til the mixture is creamy,lastly add essence 

 5 Mix the dry ingredients and the wet ingredients,beat til the mixture is smooth.slowly add milk,sour milk and pineapple juice.continue to whisk til everything is mixed together. 

 6 Pour cake mixture over the caramel and pineapple rings in pan.spread cake batter over caramel carefully in order for the cake to be smooth. 

 7 Bake the cake at 180°C for 40-45 minutes.insert a toothpick into the center of the cake.when it's 40 or 45 minutes,remove the toothpick from the cake.if the toothpick comes out clean then the cake is fully baked. 

 8  Cool the cake for 10 minutes. Flipping the cake:once your upside down cake is cool,flip it out into a serving plate by running a spatula or a thin knife between the cake and the pan.put the serving plate over the cake and flip into the serving cake. 9 Cherries:Add one cherry in the center of each pineapple round. Serve with a cup of coffee or a cup

HOW TO MAKE AN OMELETTE

Step 1. 
Cut your bell peppers, Onion, Carrots and ham into cubes.

Step 2.
Crack and add the eggs to a bowl then add salt. beat them with a fork an

Step 3. 
Put a tablespoon of butter on a heated Pan, reduce the heat to medium. Add your eggs to the pan, your vegetables and the ham.

Step 4.
Let your mixture start to cook then sprinkle some cheese on top.

Step 5. 
Gently start rolling your egg using a spatula. Be careful otherwise your egg will break.

Step 6. 
Switch off the stove and let your egg simmer for 4 minutes.

Step 7.
Remove from the pan and serve.

WHAT CAN YOU ADD IN OMELETTES?

You can add pretty much anything. If you want you can add cooked meat, cooked chicken, Zucchini etc.

Here is a tofu omelette.

Ingredients
• 6 ounces tofu
• 1 tablespoons soy milk
• 1 tablespoons nutritional yeast
• 1 tablespoon cornstarch
• 1 tablespoon brown onion (onion powder)
• ½ salt
• ¼ teaspoon black pepper
FOR THE FILLINGS
• 2 tablespoons vegan-friendly butter or margarine 
• shallots
• 2 garlic cloves 
• ½ cup dairy free cheese
• 1 ½ cup baby spinach
• 3 cups mushrooms

Instructions For Vegan Omelette
1. Heat oil on medium- high heat,cook chopped shallot until it becomes translucent. 
2. Put onion in a blender with tofu, nutritional yeast, olive oil,tumeric and garlic powder.blend and while you are blending add a teaspoon once a time of soy milk. Blend until it becomes a smooth paste.
3. Add cornstarch and blend again for 40 seconds. Add black pepper and blend again. Set aside.
4. Using a non-stick skillet, heat vegan butter and saute garlic powder,chopped mushrooms and shallot, cook until mushrooms turn brown. Add spinach and cook. Remove from the Pan and set aside.
5. Add 1 teaspoon of vegan butter in a non-stick skillet and coat the pan.
6. Add half of the tofu batter. Using a spatula spread the batter gently to cover the bottom of the skillet.
7. Cover and cook the omelette for 6 minutes or until the top is dry.
8. Using a spatula gently flip the omelet and cook for another 2 minutes.
9. Loosen the omelette and the toppings to one side of the omelette. Gently fold over the other side of the omelet and transfer into a plate.
10. Repeat the process with the remaining batter and toppings.

Variations

Omelette Sandwich : make an omelette and add it between two bread slices. Apply butter on both sides of the sandwich, heat a pan and toast the sandwich on both sides until golden brown. Cut into diagonal and serve.

Cheese Omelette : Add grated cheddar cheese or processed cheese to the egg mixture to make cheese omelette. Or just sprinkling cheese on top of an already cooked omelette. You can also use mozzarella cheese and have a perfect mozzarella cheese omelette.
