Dried Mushrooms and vegetables stuffed Pumpkin

It's  Pumpkinseason here in Zambia and what better way to cook your Pumpkin in the most delicious way.

Pumpkins are high in vitamins and minerals while being low in calories.

Here is one way you can get creative with your Pumpkin.

Dried mushrooms
Peanut butter

I used dried wild mushrooms with peanut butter.
Because of that strong rich nutty flavour.
The mushroom and peanut butter gave the Pumpkin so much life.

Picking vegetables

I used a whole Pumpkin and,green beans and dried Mushrooms but you can replace mushrooms with whatever vegetables you want to use.

I wanted to go extra miles by adding peanut butter to the food so I had to go for dried mushrooms

Picking Fruits

I went for green pepper,yellow pepper,red pepper,red onion,green beans and a carrot.
You can substitute these fruits with any fruits of your choice or you can remove whatever you don't want to use.

It looks appetizing?of course it does,and it tasted great.

Pumpkins are high in vitamins and minerals while being low in calories.

Here is one way you can get creative with your Pumpkin.

  • Whole Pumpkin
  • Dried Mushroom
  • Peanut Butter
  • 1 Medium Onion
  • 3 Medium Tomatoes
  • Green beans
  • 1 Tablespoon of garlic powder
  • 1 large carrot
  • 1 Green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 Red Onion
  • Salt
  • Cooking oil

1   Put the whole Pumpkin on a baking pan and bake it in the oven for 50 minutes at 180 degrees Celsius. Yours could take longer or less time to bake depending on whether the stove is on low, medium or high.

 2  Whilst the Pumpkin was baking I washed my mushroom thoroughly to remove the same I added the mushroom in a pot,I added salt then cooked for 30 minutes on high Then I added tomatoes and onions. I covered the pot then continued to cook. When the tomatoes were ready,I added peanut butter then reduced the stove to medium Then I cooked for another 20 minutes

  Cut longitudinal slices of yellow pepper,red pepper,green pepper,red onion,and carrot Add a handful of green beans,add one Tablespoon of garlic power Then fry them in a medium pan with little oil til cooked and crisp. Add salt and pepper to taste 

 4  Remove your mushroom from the stove. Mix your fried vegetables to your peanut butter mushroom then stir and set aside. 

    Your whole Pumpkin is already ready by now. Make a round opening with a knife at the top of your Pumpkin. If you are not sure how to get an accurate round cutting then you can use a small round saucer or you can use a round plate Nicely place it on top of your Pumpkin then cut using a knife.

 6  Gently remove and scoope out the Pumpkin seeds using a tablespoon and your vegetable filling And you are done babe.

Total time: 2 hr: 10 mins
