Spatchcock Chicken With Coleslaw Salad

A beautiful crispy spatchcock chicken full of flavor. It's really easy to prepare and it gets ready in no time
Spatchcocking a chicken is my favorite way of roasting a whole chicken. The chicken turns out juicy.

Spatchcock chicken aka butterflied chicken is an easy way to roast a whole chicken in a short time.
Spatchcocking a chicken reduces cook time. The spatchcocked chicken will come out crispy on the outside and juicy on the inside.

The good thing with spatchcock chicken is that it can be rubbed with any seasoning of your choice or it can be marinated like I did. If you are not a fan of seasoning then you can just sprinkle your chicken with black pepper and salt.

The most common problem foodies run into when roasting a whole chicken is that the chicken breasts dry out before other parts of the chicken even started roasted. The solution to the problem is? Spatchcock!.

The potatoes,carrots,broccoli, bell peppers,onion,garlic,baby corn.
This blend of vegetables grilled together with the chicken makes the chicken taste more perfect.

Spatchcocking a chicken might seem hard and the reality is that you might feel lazy to even do it but the truth is it's super easy to Spatchcock a Chicken.

INGREDIENTS AND VARIATIONS

Chicken: I'm not sure about the lbs of the chicken I used but the chicken was big enough for everyone at home. The time you'll cook the chicken will depend on how big or small your bird is. 

Vegetables: I used broccoli, potatoes,carrots,garlic,onion,bell peppers and baby corn. You can spice things up by using different vegetables of your choice. Whatever veggies you use, be assured that your chicken will taste great.

Seasoning: Season or marinate the chicken in a mixture of squeezed lemon,Rosemary, paprika, garlic and herb,chicken spice,salt and pepper. You can also  rub your chicken with olive oil then later season it. You can add different types of spices according to your liking. Your chicken your rules.

Spatchcock Chicken Recipe

Instructions:
1. Get a whole chicken, make sure it's fully defrosted. Place the chicken upside down. Use a kitchen scissors or a kitchen knife to cut through the ribs right next to the spine on both sides in order to remove the chicken's back bone.
2. Turn the chicken and gently press down the back so that it sits evenly on a grilling pan.
3. Marinate the chicken in a mixture of squeezed lemon,Rosemary, paprika,garlic and herb,chicken spice,salt and black pepper for 1 hour.
4. Grill for 10 minutes at 180° then add potatoes,broccoli, carrots,onion,bell peppers,garlic,baby corn and cherry tomatoes to the baking pan then grill for another 40 minutes.
5. You can cut the chicken into pieces or you can save it whole.

Coleslaw Salad Recipe

One of the quirkiest and easiest salads you can make. made in just five minutes. This salad is perfect for a barbeque say full of  crispy spatchcock chicken, chicken nuggets or any of your favorite dish.

This coleslaw salad is nothing fancy it's made with simple ingredients that you probably already have in your pantry.
We have coleslaw at least once in a week. Of course I'm talking about homemade.

How to make Coleslaw Salad
Ingredients and variations
Ingredients: Red and white cabbage, sliced cherry tomatoes, cucumber, grated carrots and thinly diced green Apple
Cabbage: I like to use a combination of white and red cabbage. You can also use green cabbage,Napa cabbage or Savoy cabbage, if you only have one variety then you can just stick to that. Whatever cabbage you use,the way to prepare the salad will generally be the same.

Dressing: For the dressing I used squeezed lemon and vinegar.

Tip: Let the coleslaw rest in the fridge for 10 minutes so that the cabbage can be tender but if you want it crisp then you can serve it right away.

1. Slice cherry tomatoes using a mini kitchen knife and put them on a salad plate. Cut cucumbers using a chopping board and a kitchen knife and put on a plate,grate carrots,and dice one green Apple, dip the apple slices in squeezed lemon( this prevents the Apple from turning brown) add everything in the salad.
2. Mix well and add the remaining squeezed lemon juice and a splash of vinegar to the salad.

Freezing Spatchcock Chicken
Let the chicken cool completely. Place individual pieces of chicken into freezer bags. Make sure the freezer bag doesn't have any air in it. Freeze for up to 3 months.
