Chicken And Bacon Pasta Bake Recipe

You know this recipe just happened. I didn't know what to prepare for dinner. I looked in the fridge and I thought of cooking chicken and potatoes but at the last minute I just thought of mixing everything, that's how this Pasta Bake Recipe came about. The results?  Amazing!!!.

Wait! I also mix ingredients then the results turn out to be a disaster 😂 I once cooked a meal but ended up not eating it, the meal stayed in the refrigerator til I decided to throw it away. 

It's called expectations vs reality.

But thank God for the meals that turned out delicious.


WHAT'S THE DIFFERENCE BETWEEN A CASSEROLE AND A BAKE?

Casserole: Something made in a Casserole dish.something creamy or perhaps saucy and it's always cheesy.

Bake: Anything made in an oven.

I don't know whether to call this meal a Chicken and Bacon Pasta Bake or Chicken and Bacon Pasta Casserole. It's pretty much Casserole but I'll stick to Bake.

Here are the ingredients to make this Pasta bake

• Chicken: I used Chicken breast, but you use boneless Chicken thighs

Half a packet of bacon:

• Pasta: I used elbow macaroni, but any kind of short shaped pasta will work just fine. Cook the pasta according to the instructions on the packet. 

• Potatoes

• Spring Onion

• Garlic

• Garlic and herbs spice:

• Chicken Spice

• Salt and Pepper

• Cheddar Cheese

• Mozzarella Cheese

• Knorr Cheese Sauce

Instructions:

1. Put the pasta in a pot, add a cup of water, salt and a teaspoon of oil then bring to boil. Boil until cooked but the pasta should be firm to the bite.

2. Cut the Chicken breast into cubes using a chopping board and a kitchen knife. Season with garlic and herb spice, Chicken spice, salt and paper. Fry on medium heat using a sauce pan. As it starts to brown add in some diced bacon and chopped garlic then fry until the chicken pieces are light brown. Add a sachet of tomato paste( I used garlic flavoured tomato paste). Add the pasta to the Chicken and bacon, mix well using a spatula.

3. Clean and peel 4 medium potatoes and slice them into 1 inch size. Season with salt and bring to boil for 5 minutes, then drain the excess water and line the potatoes at the base of the Casserole dish.

Top with some pasta mix and add a handful of grated cheddar and mozzarella cheese. Add in some Cheese and sauce then top with additional pasta mix. Top with the left over potato and Cheese sauce then add a sprinkle of spring onion and a handful of cheese.

Cover with a foil paper and bake for 20 minutes at 180°. Serve warm.

FREEZING:

Refrigerator: Store in an airtight container for 3 days.

freezer: Store in a airtight container and freeze for up to 1 month.


VARIATIONS

Here are some variations to the dish if you want to change it up.


GLUTEN FREE VERSION:

Swap out the pasta for gluten-free pasta and make sure you are using gluten free cheese.


DAIRY FREE:

Replace cheese with a vegan cheese or a diary free cheese sauce.

VEGETARIAN:

You can make a vegetable version of this recipe by substituting the bacon and chicken with cauliflower.

How to make creamy mushroom chicken pasta

It's really easy to make mushroom chicken pasta.

What you'll need to make creamy mushroom chicken pasta

Pasta: Use Fettuccine Pasta or any pasta of your choice.Make sure to cook the pasta in salted water.

I used fettuccine pasta by the way.

Chicken Breast: boneless chicken breasts cut into strips or cubes according to your preference. Skinless chicken thighs are also a great choice.

Mushroom: Half a pack of mushrooms.

Garlic Cloves: Finely chopped or you can use freshly minced garlic of dried garlic spice. Do not use garlic if you don't like it. Truth is it's not the center of this recipe.

Onion: Finely chopped.

Yellow pepper: Cut into strips

Red pepper: Cut into strips

Black pepper: Black pepper is also replaceable just like garlic. 

Parmesan Cheese – There is no Italian dish without some parmesan cheese. go for good quality freshly grated parmesan cheese, it will surely make a difference. Avoid using boxed parmesan cheese because it will destroy the taste.

Cheddar cheese: Like I mentioned, parmesan cheese is the center of the recipe. So the rest of the cheese can be omitted if you want. 

Mozzarella cheese: If you are going to use parmesan cheese, cheddar cheese and mozzarella cheese then you'll have to reduce the amount of the cheese compared to if you were only using one type of cheese. You'll see the amount I used as you keep on scrolling down.

Fresh cream: And now the big star of the recipe. Fresh cream gives this mushroom chicken pasta a creamy texture.

Butter: The butter helps cook the garlic and onion and adds to the flavor.

Parsley: Fresh chopped parsley

Method

1. Cut your chicken breast into small strips or cubes. Pat in case the chicken has any water. 

In a big saucer fry Chicken on low heat for 5 minutes or until the chicken is ready.Put the chicken aside and allow the oil to drain.

2. On the same saucer add 3 tablespoons of Butter, add garlic and onion and fry for a minute then add yellow and red peppers and let them fry for another minute. Add the mushrooms and let them cook for 3 minutes or until they are tender.

3. Pour in the fresh milk and let it cook for a minute. Add parmesan, cheddar and mozzarella cheese. Keep on stirring until the sauce thickens.

4.Boil salted water and add the pasta, stir occasionally til the pasta is ready.

5. Drain the pasta using a colander, open tap water and clean your pasta( I like to do this to avoid the pasta sticking together. 

6. Add the pasta in the sauce and mix. Add the chicken and mix.

7. Garnish with parsley.

8. Let the meal sit for 10-12 minutes before serving. This will allow the pasta to suck in all the sauce flavor.

Chicken nuggets are one of the kids favorite things. These nugget are perfect because they are homemade.

No one! Absolutely no one can resist these juicy golden crisp nuggets.


Do you know why I love homemade everything? Well I call it homemade everything because there is nothing I can't make or bake 😉 well homemade nuggets are great compared to store-bought nuggets because you have control over what goes in the nuggets, and making them yourself feels great.

Chicken Nuggets Recipe

The first time I made these nuggets, they disappeared real quick, this is because they are incredibly delicious. No one can resist these babies. 

What makes these chicken nuggets incredible is because you get decide what spice to use and what not to use–no more getting over-spiced chicken nuggets. Lol

Anyway chicken nuggets are great served with ketchup, honey mustard sauce or dunking them into Avocado Ranch

How to make chicken nuggets

This chicken nugget recipe is easy and you'll definitely have fun making the Nuggets.


Chicken: use skinless chicken breast, they should be boneless.

Breading: combine flour, garlic, chilli powder, salt and black pepper in a mixing bowl and whisk using a fork.

Whisk eggs in a separate bowl.

Coat the chicken first in flour, leave to marinate for an hour then coat in eggs and lastly in the flour again.

Frying instructions: deep fry the chicken til golden. Remove from the oil and put on paper towel to allow the oil to drip.

Baking instructions: if you prefer baked nuggets then coat the eggs in seasoned breadcrumbs. Place the chicken on a wire rank and drizzle with oil. Bake for 15 minutes at 210°C until golden brown and crisp.

Freezing Chicken Nuggets

Allow the nuggets to completely cool. Place the nuggets into a freezer bag or a airtight container and freeze for a month.

Reheating: to reheat the nuggets just place them on the baking sheet. Bake for 10 minutes at 200°C or untill the nuggets are warm and crispy.

  • Chilli powder
  • Garlic power
  • 1 cup flour
  • 2 eggs
  • Salt
  • Pepper
  • Chopped parsley
  • Chives
  • Vegetable cooking oil

Instructions

  1. Combine flour, garlic, chilli powder, salt and black pepper in a mixing bowl and whisk using a fork.
  2. Whisk eggs in a separate bowl. Coat the chicken first in flour, leave to marinate for an hour then coat in eggs and lastly in the flour again.
  3. Deep fry the chicken til golden brown. Remove from the oil and put on paper towel to allow the oil to drip.
  4. In a separate saucepan melt 1 tablespoon of butter, add barbeque, Peri Peri and Tikka sauce mix using a spoon.
  5. Throw the nuggets in the sauce. Mix and toss around to cost evenly.
  6. Garnish with parsley / chives.
