This vegetable rice has been a great addition to dinner time because of it's deliciousness. I'm pretty sure the kid's don't even notice that it's just vegetables.

I have been cooking this vegetable rice for years and it gets better every time I make it.

This meal can be a side dish, it can be made for lunch or weekend dinner. Vegetable Rice is a definite winner.

Homemade Vegetable Rice

A very simple and easy recipe which only takes 30 minutes to cook.

I've used fresh easy to find vegetables but you can also use frozen vegetables. Just make sure that the veggies won't have many ice crystals cause that will add excess water in the rice.


INGREDIENTS AND SUBSTITUTES

Rice: I used basmati rice but you can use any rice of your choice. Just make sure you read the package thoroughly so that you know how much water you are supposed to use.

Vegetables: I used carrots,broccoli, cauliflower, green beans,peas,baby marrow,red pepper and yellow pepper.

Stock:I used 2 chicken cubes for taste and sweet chilli sauce. You can also use beef cubes or vegetable stock.

Onion: Onion makes the food flavorful. I never miss adding onion in my food.


EQUIPMENTS USED

• Stainless Steel Pots

• Wooden Spoon

• Measuring Jug

• Kitchen Knife

• Chopping board


STEP BY STEP INSTRUCTIONS

Rice: Heat 4 cups of water in a stainless steel pot and add salt.

Wash and rinse your rice. When the water is hot,add your rice and cook for 15 minutes on medium heat.

Vegetables: Cut onion,green beans and carrots using a chopping board and fry on medium heat using a skillet or a pot starting with hard to cook vegetables. When the vegetables are ready add 2 chicken cubes and sweet chilli sauce. Let the vegetables simmer for 1 minute then add cooked rice in the vegetables.

FREEZING

You can store left over rice in the refrigerator for 3 days.

PREHEATING

Remove the rice from the fridge, add a few drops of water to the rice and microwave for a few seconds. The water will prevent the rice from drying out.

Ingredients

  • 1 Packet of rice
  • Carrots
  • Broccoli
  • Cauliflower
  • Green beans
  • Peas
  • Baby marrow
  • Red pepper
  • Yellow pepper
  • 2 Chicken cubes
  • Sweet chilli sauce
  • Onion

Instructions

  1. Heat 4 cups of water in a stainless steel pot and add salt. Wash and rinse your rice. When the water is hot, add your rice and cook for 15 minutes on medium heat.
  2. Wash green beans and cut in small size using a chopping board then put on a plate. Wash and cut carrots into small pieces then put on another plate.
  3. Fry your vegetables on medium heat using a skillet or a pot starting with hard to cook vegetables.
  4. Cut onion and add in the vegetables.When the vegetables are ready add 2 chicken cubes and sweet chilli sauce. Let the vegetables simmer for 1 minute then add your rice in the vegetables.
