There are four meals that I enjoy eating no matter how upset I am, these are beef liver, chicken gizzards, fried or grilled T-bone and cooked chicken hearts.

Unfortunately not every fried chicken lover is a fried chicken gizzard lover.. But those who don't eat chicken gizzards don't know what they are missing.


We have a lot of street food like fried chop meats and fried sausage or grilled sausage sold in many corners of the streets here in Zambia but none of these street food sellers have considered selling fried or grilled chicken gizzards, otherwise it can be a very profitable business, i'd personally be buying every week night.

I was dying to show you how to make skewer gizzards.

In spite of them being cheap and delicious, a lot of people avoid buying gizzards because they consider cleaning them to be time consuming.. But it's quick and easy.



Just like with oxtail stew, chicken gizzards are underrated chicken cuts that people don't like to buy because they feel cleaning them is a big obstacle, but unlike oxtail, gizzards are easy to clean and quick to cook, the total time to prepare and cook marinated chicken gizzards doesn't even exceed 2 hours.

HOW TO CLEAN CHICKEN GIZZARDS 

It's more difficult to clean beef or chicken than cleaning chicken gizzards.


CLEANING CHICKEN GIZZARDZ STEP BY STEP

Step 1. 

Remove the inner yellowish sac using your hands, just pull it, it will come out without any difficulties. Removing the yellowish skin layer with your fingers is an easy way of cleaning chicken gizzards, but you can use a pairing knife if you want. 


Step 2.

Thoroughly wash the gizzards under running water.


HOW TO COOK CHICKEN GIZZARDS 

  1. Clean and cut the gizzards in half. Place them in a bowl and add 2 tablespoons of barbecue sauce, a teaspoon of Worcestershire sauce, 2 cloves of diced garlic and 2 tablespoons of chilli spice/flakes, salt, and pepper
  2. Marinate for 30 minutes then place the gizzards on a hot pan and allow them to steam in the marinate until they start to fry. 
  3. Add 1 tablespoon of olive oil and stir fry until golden brown. Set aside to cool.
  4.  Soak some skewers/ kebab sticks in water. 
  5. Cube onion and peppers. Put the peppers, onion, and gizzards on the skewers interchanging the gizzards with peppers.
  6. Rub some barbecue sauce on the gizzards and put them on the grill or braai until brown.

NOTE:

  • If you want your gizzards to be sticky, then keep on adding some extra marinade or barbecue sauce while the gizzards are on the braai/grill. 

  • CHILLI SPICE: I used a combination of chipotle rub and Brazilian smokehouse rub.

  • You can buy pre-cleaned chicken gizzards to save time.


HOW TO SERVE CHICKEN GIZZARDS
 

You can serve gizzards with polenta, rice, carrot salad, cucumber salad, potato salad, mashed potatoes, or a cup of juice.

INGREDIENTS

  • ½ kg chicken gizzards
  • 1 onion

  • 1 red pepper
  • 1 yellow pepper
  • chilli spice
  • barbecue sauce
  • ½ tablespoon salt

  9. Actually, in Japan, is common to eat the gizzards. They eat it as yakitori. I eat it some times but not all of the time.
